Apple Coleslaw

Typically coleslaws dressing is loaded with sugar. This recipe uses monk fruit to sweeten the dressing, I add the apples to add an extra bit of crunchy sweetness.

  • 1/2 cup soy free mayo Primal Kitchen Avocado Mayo
  • 1/3 cup distilled vinegar
  • 2 TBS spicy brown mustard
  • 2 TBS monk fruit or stevia
  • sea salt and pepper to taste


  • 32 oz tri-color undressed coleslaw
  • 1/2 honeycrisp apple diced
  • 1/4 sweet onion diced



  • Whisk all dressing ingredients in a medium sized glass bowl.


  • Toss undressed coleslaw, diced apple, and sweet onion in a large glass bowl.
  • Add dressing and toss.
  • Can be made a head of time and stored in fridge.
