
Apple Coleslaw
Typically coleslaws dressing is loaded with sugar. This recipe uses monk fruit to sweeten the dressing, I add the apples to add an extra bit of crunchy sweetness.
Ingredients
Dressing
- 1/2 cup soy free mayo Primal Kitchen Avocado Mayo
- 1/3 cup distilled vinegar
- 2 TBS spicy brown mustard
- 2 TBS monk fruit or stevia
- sea salt and pepper to taste
Slaw
- 32 oz tri-color undressed coleslaw
- 1/2 honeycrisp apple diced
- 1/4 sweet onion diced
Instructions
Dressing
- Whisk all dressing ingredients in a medium sized glass bowl.
Slaw
- Toss undressed coleslaw, diced apple, and sweet onion in a large glass bowl.
- Add dressing and toss.
- Can be made a head of time and stored in fridge.
