Jalapeno Popper Chicken Casserole

If you love jalapeno poppers you will love this recipe. I take my bacon wrapped stuffed jalapeno recipe, deconstruct it, and put it on top of a bed of cauilflower rice and shredded chicken.
This meal is super low in carbs at 7 grams and packed with 44 grams of protein. It satisfies the cravings of comfort bar food while keeping your nutrition incontrol.

Ingredients
 

Shredded Chicken

  • 2 1/2 lbs. raw chicken breast Don't have time to boil and shred the chicken? Can get already pulled rotessirie chicken.
  • 6 cups water
  • 1 tsp salt
  • 1 cup chicken broth Or save 1 cup of stock to add back to the chicken after shredding.

Cauliflower Rice

  • 2 12 oz bags of riced or chopped cauliflower
  • 1/4 onion diced
  • 2 eggs
  • 1/2 cup shredded cheese
  • 1 tsp salt
  • * optional, diced jalapenos

Sausage Filling

  • 1 lb Italian sausage
  • 1/4 onion diced
  • 12 oz cream cheese
  • 1 1/2 cups half and half
  • salt and pepper to taste

Casserole Topping

  • 1 1/2 cups shredded mozzarella
  • 3/4 cup real bacon bits
  • 3 whole jalapenos sliced

Instructions
 

Shredded Chicken

  • Fill stockpot with 6 cups of water.
  • Add chicken breasts, bring to a boil covered.
  • Once at a boil, turn down to low and let simmer for 45 minutes.
  • When done remove chicken from the pot, saving 1 cup of chicken stock to add back to the shredded chicken.
  • Cool and shred.
  • Mix in chicken stock or broth.

Cauliflower Rice

  • Preheat oven to 375 degrees
  • Mix riced cauliflower, 1/4 diced onion, 2 eggs, 1/2 cup of shredded cheese, optional diced jalapenos, and 1 tsp of salt in a medium-sized bowl.
  • Place cauliflower rice mixture in the bottom of a 9×13 baking dish.
  • Put in preheated oven and bake for 20 minutes.
  • After removing layer shredded chicken over the cauliflower rice.

Sausage Filling

  • In a medium-sized saucepan, cook sausage until done, when pink is no longer present.
  • Add diced onion and saute 3-4 minutes.
  • Add cream cheese stiring in until well combined.
  • Stir in half and half, remove from heat.
  • Layer evenly over the shredded chicken.

Casserole Topping

  • Layer shredded cheese over the sausage filling.
  • Sprinkle bacon bits evenly over the shredded cheese.
  • Top with jalapeno slices.
  • Turn oven down to 350 degrees.
  • Place in preheated oven and bake for 25 minutes.
  • If you like a crispy topping broil for 2-3 minutes.
