Ingredients
 

  • 2 12 oz bags of cauliflower crowns/florets Or 2 heads of cauliflower, crowns removed
  • 1 egg
  • 1 TBS olive oil
  • Sea salt and pepper to taste
  • 1/2 cup real bacon bits
  • 3/4 cup shredded cheese of choice
  • 3 green onion stalks diced

Instructions
 

  • Preheat oven to 425 degrees.
  • Whisk egg, olive oil, salt in pepper in large mixing bowl.
  • Add cauliflower crowns to egg mixture, toss until crowns are evenly coated.
  • Place on a non-stick aluminum foil-lined baking sheet.
  • Place in preheated oven for about 15 minutes, tossing halfway in-between time.
  • Turn oven to broil at 550 degrees
  • Broil for 2 minutes. Remove from the oven.
  • Sprinkle bacon and cheese over the top of cauliflower.
  • Place bake in the oven and broil for additional 2 minutes, or until desired crispiness.
  • Remove, sprinkle diced green onion.
  • Serve with your favorite ranch dressing. I serve with my homemade Ranch.
