
Apricot Glazed Pork Tenderloin

1 large cast iron skillet
Ingredients
Pork
- 3 lbs. Pork tenderloin
- 1 TBS olive oil
- Sea salt and pepper to taste
Apricot Glaze
- 3 garlic cloves minced
- 1 TBS olive oil
- 1 TBS Spicy brown mustard
- 1/2 cup sugar free apricot jam *or chopped fresh apricots, will need to add monk fruit or stevia to taste
- 1/2 tsp sea salt
- 1/2 tsp red pepper flakes *more if desired
Instructions
Pork
- Preheat oven at 325 degrees.
- In the large cast iron skillet heat 1 TBS of olive oil.
- Season both sides of the pork with salt and pepper.
- Place in the heated skillet.
- Sear on each side for 5-7 minutes. While searing make the glaze.
Apricot Glaze
- Sauté garlic in olive oil in medium sauce pan.
- When garlic is tender, add in apricot jam or apricots.
- Stir in mustard, salt, and red pepper flakes. Set aside to top pork before roasting.
Roasting Pork
- When pork has finished searing top with apricot glaze.
- Place in the preheated oven.
- Roast for 20-22 minutes.
- Remove from oven and let rest for 5 minutes.
- Slice and serve with your favorite low-carb side.
