Apricot Glazed Pork Tenderloin

Equipment

1 large cast iron skillet

Ingredients
 

Pork

  • 3 lbs. Pork tenderloin
  • 1 TBS olive oil
  • Sea salt and pepper to taste

Apricot Glaze

  • 3 garlic cloves minced
  • 1 TBS olive oil
  • 1 TBS Spicy brown mustard
  • 1/2 cup sugar free apricot jam *or chopped fresh apricots, will need to add monk fruit or stevia to taste
  • 1/2 tsp sea salt
  • 1/2 tsp red pepper flakes *more if desired

Instructions
 

Pork

  • Preheat oven at 325 degrees.
  • In the large cast iron skillet heat 1 TBS of olive oil.
  • Season both sides of the pork with salt and pepper.
  • Place in the heated skillet.
  • Sear on each side for 5-7 minutes. While searing make the glaze.

Apricot Glaze

  • Sauté garlic in olive oil in medium sauce pan.
  • When garlic is tender, add in apricot jam or apricots.
  • Stir in mustard, salt, and red pepper flakes. Set aside to top pork before roasting.

Roasting Pork

  • When pork has finished searing top with apricot glaze.
  • Place in the preheated oven.
  • Roast for 20-22 minutes.
  • Remove from oven and let rest for 5 minutes.
  • Slice and serve with your favorite low-carb side.
