This recipe came into creation the day my new spiralizer arrived. After attempting to buy multiple premade “zoodles” from the store and never being satisfied with any to replace noodles, I have wanted to purchase a spiralizer to make homemade “zoodles” for many years. I just always forget that I want one. When I was on Amazon the other day it popped up as a purchase suggestion for only $20, so of course I added it to the cart!

Shrimp was the first choice of meat to try with the “zoodles.” I figured the two would compliment each other well, and they sure did. We ate every last bite with nothing left-over! I highly recommend purchasing a spiralizer and making this dish.

Calories per serving for 8 oz. of shrimp and 3/4 cup of “zoodles:” 356; Fat: 20g; Carbs: 11g; Protein: 32g; Fiber: 1g.

Equipment

1 large cast iron skillet

Ingredients
 

Shrimp Marinade

  • 4 lbs. large shrimp peeled, deveined, tail off
  • 4 TBS olive oil
  • 6 garlic cloves minced
  • 2 tsp sea salt
  • Red pepper flakes to taste

Scampi Sauce

  • 2 TBS olive oil
  • 4 TBS butter
  • 6 garlic cloves minced
  • 1` cup dry white wine
  • 1/2 tsp lemon juice
  • red pepper flakes to taste
  • 6 TBS fresh parsley chopped

Instructions
 

Shrimp Marinade

  • Mix olive oil, minced garlic cloves, salt, red pepper flakes in a large glass bowl.
  • Add shrimp and toss until well combined. Cover and marinate in the fridge for 1 hour.

Cooking shrimp

  • Heat 1 TBS of olive oil in a large cast iron pan.
  • Place shrimp in a single layer in heated pan. Will need to do this step multiple times when cooking larger serving sizes.
  • Cook each side for about 1 1/2 minutes or until shrimp is pink.
  • Remove when done and set aside on a plate to rest.

Sauce

  • Add olive oil and butter to the hot cast iron skillet that the shrimp was cooked in.
  • Add in minced garlic cloves. Sauté until tender.
  • Stir in white wine, allow to simmer 3-4 minutes.
  • Add parsley, red pepper flakes, sea salt, and pepper to taste.
  • Add shrimp back in and cook for about 2 minutes.
  • Serve over zoodles.

Zoodles

Zoodles are a great replacement for noodles. You can purchase them already done from the store. But from personal experience purchasing a spiralizer for $20, and making them fresh is the best way to go.

Equipment

1 Spiralizer
1-2 baking sheets

Ingredients
 

  • 32 oz. fresh whole zucchini
  • 2 tsp sea salt

Instructions
 

  • Preheat oven on convectional 325 degrees.
  • While oven is preheating, spiralize the zucchini per equipment instructions to make zucchini into noodles.
  • Place spiralized zoodles evenly on baking sheet. For larger servings you may need 2 baking sheets.
  • Place zoodles in the preheated oven for 12 minutes.
  • Remove from oven and pat with paper towel. Serve with your favorite meat dish and sauce.
