Smoked Meat Rub and Sugar-Free BBQ Sauce



Our weekday evenings have been so busy. Both my husband and I are in the midst of coaching seasons. He has been busy doing weight training for the high school football and wrestling programs. I have been busy coaching my daughter’s club volleyball team. On top of that, all our kids have been on multiple sports teams this winter, having evening camps, and are also involved in other non-sport activities. We all walk through the door with no time to cook dinner. To get us by my husband smokes 9-12 pounds of meat on our Traeger over the weekends so we have weeknight dinners already prepared. I am so thankful for his commitment to getting this done while I am coaching at volleyball tournaments. This sugar-free BBQ sauce and smoked meat rub are two of my recipes he uses regularly. Having this meat on hand has made our life easier, while still making sure we are getting good quality low-carb foods in. We throw it on salad, add it to quesadillas made with Siete Almond Flour Tortillas, or we just eat it plain with a quickly roasted vegetable on the side.

Smoked Meat Rub

This rub can be used on a variety of meats. Smoked pork, brisket, drumsticks, tri-tip, chicken breast. The rub is for 9 pounds of meat.

Ingredients
 

  • 2 TBS chili powder
  • 1 tsp paprika
  • 1 tsp smoked paprika
  • 1 TBS garlic powder
  • 1 TBS onion powder
  • 2 TBS brown sugar swerve
  • 3 TBS sea salt
  • 1 tsp black pepper
  • 1 tsp dried chives
  • 1 tsp dried oregano
  • 9 lbs meat of choice

Instructions
 

  • In a medium-size bowl whisk together chili powder, paprika, garlic powder, onion powder, brown sugar swerve, sea salt, and pepper.
  • Mortar dried chives and oregano until finely ground. Add to the seasoning mix and stir until well combined.
  • Rub into meat of choice.
  • We smoke ours on our Traeger. Meat can be slow-cooked in the oven, crockpot, or quickly done in an instant pot.
  • After the meat has cooked/been shredded be sure to save the juices to add back to the meat for moisture.

This rub recipe seasons about 24- 6 oz servings of meat.

Sugar Free BBQ Sauce

Ingredients
 

  • 1/4 cup no sugar added ketchup
  • 1/4 cup + 1 TBS tomato paste
  • 1 cup water
  • 1/3 cup brown sugar swerve
  • 3 TBS apple cider vinegar
  • 2 TBS Coconut Secrets coconut aminos
  • 1/2 tsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt more or less if desired
  • 1/4 tsp cayenne pepper
  • pepper to taste

Instructions
 

  • Whisk all ingredients in a medium-sized saucepan, over medium heat.
  • Bring to a boil.
  • Turn down to low heat and simmer for 6-10 minutes or until thickened.
