
Who is ready for sunshine and spring? I am! In fact, I’m already thinking about and planning my garden. Unfortunately living in North Idaho means I have to wait until at least Mother’s Day to really get to the garden, unless I can talk my husband into getting me an awesome green house! Since I am ready to bring winter to a close, here is one last warm recipe before we dive into all things spring. These pork chops are perfectly accompanied with this apple bacon topping. The topping also goes well on pork tenderloin if you prefer that. Serve with your favorite side or with the brussels sprouts recipe I typically serve it with.

Grilled Pork Chopped Topped with Apple Bacon Saute
Equipment
Ingredients
Pork Chops
- 5 high quality bone in pork chops
- salt and pepper to taste
Apple Bacon Topping
- 3 slices of lean high quality bacon diced (ex. Hemplers)
- 1/4 onion diced
- 1 large honey crisp apple diced
- 1/2 tsp cinnamon
- 1/8 tsp ground cloves
- 1/8 tsp all spice
- dash of cayenne pepper
- 2 tsp Stevia or monk fruit
Instructions
- Preheat grill on medium to high heat. While grill is heating season the pork chops with salt and pepper.
Apple Bacon Topping
- Cook diced bacon on medium heat in a medium sized fry pan.
- When bacon is cooked all the way through add diced onion and apples.
- Stir in all the seasonings and saute on low-medium heat for 8-10 min.
- While topping is sauting start grilling the pork chops.
Pork Chops
- Place all the pork chops on the grill, medium to high heat, searing both sides for 2 minutes.
- Turn grill down to low to medium heat, grill the pork chops an additional 5-7 minutes on each side. Time varies depending on the thickness of the pork chop. Bring to an internal temperature of 145 degrees.
- When done remove from grill and let rest uncovered for 5 minutes.
- Serve with apple topping and favorite vegetable side to accompany.

Brussels Sprouts

Ingredients
- 4 slices of lean high quality bacon diced (ex. Hemplers)
- 1/4 onion diced
- 2 lbs brussels sprouts prepped and cleaned
- salt and pepper to taste
Instructions
- In a large cast iron pan cook diced bacon on medium heat. When cooked all the way through. Add onion and sprouts. Saute for 25 minutes, stirring occasionally. I wait about 7-8 minutes to stir because I like my brussels sprouts crispy.
